Samples from the runs are laboratory tested – nutritional analysis, stability testing that backs the 24-month shelf life, and heavy metal screening – all against US FDA standards, even though the sauce is made in Penang and sold first to Malaysian kitchens. The tests are the quiet part of the label you cannot see, and they are the part the recipe depends on.
