Grilled Fish and Prawns: A Seafood Pairing Guide for Vinegar-Based Sauce

Food Pairings Article

Seafood is where most hot sauces quietly fail. Fish, prawns, and squid have their own flavour, and they are sensitive to anything that buries it. A thick, sugary sauce turns a grilled fish into a sauce delivery vehicle, which is a shame, because seafood and a little heat are one of the oldest pairings in this part of the world.

The fix is not less sauce. It is a different kind of sauce.

Why Acidity Belongs With Seafood

Fat and salt are what make grilled seafood taste rich, and acidity is what keeps that richness from turning heavy. This is the same logic behind the lime squeezed over ikan bakar, the tamarind in a fish curry, the lemon on a plate of fried squid. Acid sharpens. It resets your palate between bites, so the tenth bite tastes like the first.

A vinegar-based sauce does this with none of the work. It is thin enough to coat a fillet lightly instead of blanketing it, and the heat sits at the back of the mouth rather than the front.

The Grilled Fish Rules

Dry the skin before it touches the grill. Salt early, sauce late. If you sauce a fish before grilling, the sugar burns before the flesh cooks. Brush or drizzle after the fish comes off the heat, while it is resting, so the sauce warms through but the skin stays crisp.

For a whole fish, work from the spine outwards and let people add more themselves. For fillets, a thin line down the centre is enough. With a vinegary sauce you want the occasional bright hit, not an even coating.

Prawns: Short Cooking, Late Saucing

Prawns are done in two minutes and unforgiving after that. High heat, quick turn, straight out of the pan. Sauce goes into the pan for ten seconds after the prawns come out, then everything is tossed together. The sauce thickens slightly from the prawn juices and stays sharp.

Shell-on prawns take sauce differently from peeled ones. With shells, the sauce mostly lands on your fingers, which is not a problem. Peeled prawns absorb more, so use less than you think you need.

Squid, Scallops, and the Rest

Squid wants the highest heat and the shortest time, scored so it curls and catches the sauce. Scallops want a hard sear and nothing else until the last second. Clams and mussels are the opposite: they cook in their own liquor, so the sauce goes in with them and reduces down into something you can mop up with bread.

Across all of it the principle holds. Cook the seafood to just done. Sauce after. Never let the sauce sit in the pan long enough to turn sweet and sticky.

The Simple Plate

Grilled fish, a squeeze of lime, a little thin vinegar-based sauce with nutmeg in it, and white rice. Nothing else is needed. That is the whole guide.

Tanjong Sauce® is built for this plate. Eight ingredients, no MSG, thin enough to pour, and warm rather than punishing. It stays out of the way of the fish, which is the highest compliment a sauce can get.
