We Almost Quit: The Midnight Kitchen Conversation That Saved Tanjong Sauce®

It was 2 a.m. on a Tuesday. The kitchen looked like a crime scene — chili powder on every surface, vinegar fumes so strong my eyes were watering, and a batch of sauce on the stove that was, by any honest assessment, terrible.

We’d been at this for months. Recipe iteration number 47. Maybe 48. We’d lost count. And this batch — the one we’d been convinced was finally right — had come out wrong. Too vinegary. Not enough depth. The nutmeg wasn’t coming through. It tasted like disappointment with a side of wasted ingredients.

This is the moment every small brand faces but few talk about. Not the launch party or the first sale or the five-star review — the moment when quitting feels like the sensible option. When the gap between what’s in your head and what’s in the pot seems impossible to close.

We sat at the kitchen table, surrounded by failed batches, and had the conversation. Should we just stop? The numbers didn’t make sense. The competition was enormous. Nobody was asking for another hot sauce — the market is flooded with them.

What kept us at that table wasn’t ambition or business strategy. It was a memory. A specific plate of char kway teow at a stall off Chulia Street, drizzled with a house-made chili sauce that had something in it we couldn’t identify — a warmth underneath the heat that made the whole dish sing. We’d asked the aunty what it was. She’d just smiled and said, ‘Nutmeg, lah.’

That memory was the anchor. We knew what we were chasing wasn’t imaginary — it existed in Penang kitchens, in hawker stalls, in home-cooked meals across the island. We just hadn’t figured out how to put it in a bottle yet.

Batch 53, three weeks later, was the one. The nutmeg came through. The vinegar wasn’t fighting the chili anymore. The balance was right. We tasted it on plain rice, on fried eggs, on cold leftover chicken — and for the first time in months, we didn’t want to change a single thing.
