Batch by Batch: Why We Refuse to Mass-Produce

Behind the Brand Article

Every food brand reaches a moment where the numbers start talking. Scale up the production line, cut the unit cost, flood the shelves. It is a sensible business decision, and it is also the exact moment most products quietly stop tasting like themselves.

Tanjong Sauce® comes from a 1970s family recipe, and family recipes have a low tolerance for shortcuts. The list is short: vinegar, chili powder, garlic powder, onion powder, ginger powder, nutmeg powder, sugar, and salt. When the list is that short, every ingredient has to do its job, and there is nowhere to hide a compromise.

So we make the sauce in small batches instead. Each batch is mixed, bottled, and traced, with our production carried out in a facility designed around MeSTI food safety principles in Simpang Ampat, Penang. Every bottle carries GS1 barcoding, which means each one can be traced back to its batch. Small batch is not a marketing word on our label. It is the literal truth of how the sauce is made.

There is a trade-off, and we accept it openly. Small batches cost more per bottle than a continuous production line would. They also mean the sauce you open tastes the way the recipe intended, and the person making it can taste every batch before it goes out. That is a trade worth making.

The recipe is from the 1970s. The certifications are current, JAKIM halal and MeSTI both. The production method is deliberately slow. Some things you do not rush, because the only reason the sauce exists is the taste, and the taste does not survive the factory line.
