“I Don’t Even Like Hot Sauce”: 7 People Try Nutmeg Heat for the First Time
Some people love hot sauce. They have a fridge shelf dedicated to it. They argue about Scoville units. They travel with their own bottle.
This article is not about those people.
This is about the other group: the ones who say “I do not really do spicy food” or “hot sauce just tastes like vinegar and pain” or “I tried Tabasco once in 2015 and I am still recovering.”
We found seven of them. We handed them a bottle of Tanjong Sauce®. We asked them to try it on something simple — plain white rice, a piece of fried chicken, a spoonful of soup. And we wrote down what happened.
Participant #1: Aisyah, 28, Teacher
Her claim: “I cannot handle anything spicier than black pepper.”
What we gave her: A teaspoon stirred into plain white rice.
Her reaction: Long pause. Stirred the rice again. Took another bite. “Wait. It is not… burning? There is like, sweetness first? And then something warm, but not painful warm. More like… ginger tea warm?”
Her verdict: Finished the whole bowl. Asked where to buy it.
Participant #2: Raj, 34, Engineer
His claim: “Hot sauce is one-dimensional. It is just heat. I would rather use actual chilies.”
What we gave him: Fried chicken drumstick with three drops on top.
His reaction: Chewed thoughtfully. Went back for another bite without the sauce, then another with it. “Okay, there is something else in there. It is not just chili. What is that? Cinnamon? Cloves?”
Our answer: Nutmeg. Penang nutmeg.
His verdict: “That is clever. The nutmeg fills the gap between the heat and the flavour. It is like… the sauce has an aftertaste that is not just more heat.”
Participant #3: Mei Ling, 41, Accountant
Her claim: “I only use soy sauce and sesame oil. Hot sauce ruins the taste of the food.”
What we gave her: A small dish of Tanjong Sauce® as a dipping sauce for steamed dumplings.
Her reaction: Dipped cautiously. Ate. Dipped again immediately. “This does not taste like hot sauce. It tastes like… a sauce that happens to have some heat in it. The dumpling still tastes like a dumpling. The sauce just makes it better.”
Her verdict: Asked if it works on steamed fish. (Answer: yes, it absolutely does.)
Participant #4: Hafiz, 22, University Student
His claim: “Hot sauce all tastes the same. Vinegar and chili. Boring.”
What we gave him: Instant noodles, drained, tossed with a teaspoon of sauce.
His reaction: Ate. Stopped. Looked at the bottle. Looked at the noodles. “Bro. Bro. This is instant noodles?” Ate the rest in under two minutes. “If I had this in my dorm, I would cook so much more.”
His verdict: “This is not hot sauce. This is a flavour upgrade in a bottle.”
Participant #5: Auntie Kamala, 58, Retired Home Cook
Her claim: “I make my own sambal. Store-bought sauces have too many chemicals.”
What we gave her: The bottle. Unopened. Asked her to read the ingredient label first.
Her reaction: Read the label. Read it again. “Vinegar, chili powder, garlic powder, onion powder, ginger powder, nutmeg powder, sugar, salt. That is it?” Tried a drop on her finger. “Wah. The nutmeg is strong. Good strong. Not hiding behind sugar.”
Her verdict: “I am not going to stop making my sambal. But on days when I am tired? This will do. More than do.”
Participant #6: Dan, 30, Australian Expat
His claim: “I have been in Malaysia for three years and I still cannot handle the spice level here.”
What we gave him: A spoonful over nasi lemak (with the sambal on the side, not mixed in).
His reaction: “Mate. This is what I have been looking for. It has got the Malaysian flavour profile but without the ‘am I going to regret this tomorrow’ level of heat. The nutmeg thing — that is what makes it work. It is warm, not aggressive.”
His verdict: Immediately ordered two bottles to take back to Australia. “My mum is going to love this. She thinks black pepper is spicy.”
Participant #7: Zara, 26, Graphic Designer
Her claim: “I do not eat hot sauce because I do not want my food to just taste like hot sauce.”
What we gave her: A simple tomato-and-egg stir-fry with a teaspoon of Tanjong Sauce® added during cooking.
Her reaction: “Wait. I can still taste the tomato. I can still taste the egg. But there is this… layer underneath? Like a warm blanket of flavour? Is that weird to say?”
Our answer: Not weird. That is exactly the design. Tanjong Sauce® is built to enhance food, not override it.
Her verdict: “If all hot sauce was like this, I would be a hot sauce person.”
What These Seven Conversations Taught Us
Nobody said “it is too spicy.” Nobody said “I cannot taste my food anymore.” Nobody said “this is just like every other hot sauce.”
What they did say, in their own words: “warm, not painful.” “The nutmeg fills the gap.” “The food still tastes like the food.” “This is not hot sauce — this is a flavour upgrade.”
If you have written off hot sauce as one-dimensional heat, maybe the problem is not hot sauce. Maybe the problem is you have not tried one that was designed to do something different.
Three drops. That is all it takes to find out.
