Modern Fusion: Penang Pasta Night with Tanjong Sauce®

Fusion cuisine gets a bad rap sometimes. But when it’s done right — when two culinary traditions meet as equals — the results can be genuinely thrilling.

So tonight, we’re putting away the chopsticks and reaching for the spaghetti. Because the perfect partner for Tanjong Sauce® might just be a bowl of al dente pasta.

Why Pasta + Tanjong Sauce® Works

Think about it: Italian cooking is built on tomatoes, garlic, olive oil, and chili (peperoncino). Penang cooking is built on chilies, garlic, tangy vinegar, and savory depth. The two traditions share the same foundational flavors — they just express them differently.

Tanjong Sauce® bridges the gap. Its acidity stands in for tomatoes. Its spice replaces peperoncino. And its umami depth does what anchovies do in Italian cooking: adds savory backbone without being obvious.

Recipe: Aglio e Olio al Tanjong

Ingredients:

  • 200g spaghetti or linguine
  • 3 tbsp olive oil
  • 5 cloves garlic, thinly sliced
  • 2 tbsp Tanjong Sauce®
  • 1 tsp dried chili flakes (optional, for extra heat)
  • Fresh parsley, chopped
  • Parmesan or grated cheddar (yes, really)
  • Lime wedge for serving

Method:

  1. Cook pasta in salted water until al dente. Reserve 1 cup of pasta water.
  2. While pasta cooks, heat olive oil in a large pan over medium-low heat. Add sliced garlic and cook until golden and fragrant — about 2 minutes. Do not burn.
  3. Stir in Tanjong Sauce® and chili flakes. Cook for 30 seconds until aromatic.
  4. Add drained pasta to the pan with the sauce. Toss well, adding pasta water a splash at a time to create a silky emulsion.
  5. Remove from heat. Toss with parsley and grated cheese.
  6. Serve with a lime wedge. Squeeze lime over the pasta just before eating — the acidity brightens everything.

The Result

What you get is a pasta that tastes unmistakably Italian in technique — but unmistakably Penang in flavor. The garlic and olive oil are familiar, but the sauce brings a deeper, more complex heat. The lime at the end is pure Southeast Asia.

Serve with a simple cucumber-acar salad on the side for crunch and freshness. And don’t forget extra Tanjong Sauce® at the table — because everyone will want more.
