150 Years of Heat: The Story of the World’s First Hot Sauce Brand

When you reach for a bottle of hot sauce, you are holding the result of over 150 years of condiment history. Here are the brands that started it all.

Tabasco (1868) – The Pioneer

Edmund McIlhenny started making Tabasco sauce on Avery Island, Louisiana, right after the American Civil War. He grew tabasco peppers, mashed them with salt, aged the mash in white oak barrels for up to three years, then blended it with vinegar. The recipe has barely changed since. Tabasco is now sold in over 195 countries and remains family-owned.

Lingham’s (1908) – Malaysia’s Original

While Tabasco was conquering the West, Lingham’s was being born in Malaysia. Founded in 1908, Lingham’s Chili Sauce is a sweet-spicy condiment that has been a staple in Malaysian kitchens for over a century. It represents the Southeast Asian approach to hot sauce: sweeter, thicker, and designed for local palates.

Huy Fong Sriracha (1980) – The Disruptor

David Tran, a Vietnamese immigrant, started Huy Fong Foods in Los Angeles in 1980. His sriracha sauce, with its distinctive green cap and rooster logo, became a global phenomenon within decades. It is now one of the most recognised condiment brands in the world.
